Guide Quarin des Vins de Bordeaux: Château Nairac (Barsac)

Château Nairac a été la révélation de Sauternes/ Barsac au milieu des années 1990. Il est aujourd’hui l’un des plus grands vins liquoreux de Bordeaux et de France. En produisant une moyenne de 7 hectolitres à l’hectare, le cru est sorti du standard de l’appellation qui en autorise 25. Or, à Sauternes, la qualité est acquise à la vendange et, seul jusqu’à présent, Yquem se permettait une telle rigueur dans la sélection des raisins les plus confits. Nicolas Heeter-Tari obtient des résultats très réguliers et somptueux depuis 1996. En prenant la direction de la propriété au début des années 1990, il s’est engagé dans la production de vins liquoreux naturels, écartant l’usage de la chaptalisation autorisée et de la cryoextraction.

Nairac est botrytisé ou n’est pas ! Tout le monde n’a pas apprécié cette démarche très élitiste à la limite de la rupture économique. Des flèches ont pointé de toutes parts, mais le goût de ce vin a été le plus fort !
Tous les millésimes possèdent le toucher de bouche soyeux, fondant et aérien, que seule la grande pourriture noble procure au vin. Le vin fermente en barriques. La durée de l’élevage est proportionnée aux qualités intrinsèques de chaque millésime. Ce n’est plus l’application standard des dix-huit mois d’élevage, mais un travail plus affiné et plus noble, du véritable cousu main. Depuis 2005, le vin est élevé sur lies et présente une plus grande fraîcheur. Chaque millésime décline des variations d’arômes et de saveurs complexes, qui passent tour à tour de la fraise des bois, du gingembre, de la noix de muscade, de la noix de coco, de l’ananas, de la pomme verte, du safran, du curry, à une touche de citron vert confit bien caractéristique du terroir de Barsac. Voyant sa densité exceptionnelle, j’ai confronté Nairac à Yquem pour les millésimes 1994, 1995, 1996 et 1997.

Nairac a gagné trois fois sur quatre, ne cédant que devant le grand Yquem 1995. Après avoir lu ce comparatif (trop osé pour certains), des lecteurs m’ont aidé à organiser une dégustation plus large, sur dix millésimes de chaque, à l’aveugle et en public. Résultat : moitié-moitié. Depuis 2004, Yquem a modifié sa façon de faire et repris l’avantage, mais Nairac conserve un exceptionnel rapport qualité/prix. Ce vin enchante par la complexité de ses arômes et la sensualité d’un corps caressant où la présence de la pourriture noble rend la sucrosité si aérienne. Il est incrachable et d’une infinie l  ongueur. Je vous recommande aussi Esquisse de Nairac, dont tous les millésimes sont délicieux et marqués par ce fondant superbe.

2010  17,25/20 ou 93/100     à boire entre 2014 et 2035
Couleur jaune-vert. Nez pur sentant la mousse de chêne typique du botrytis. Entrée en bouche précise et raffinée, puis le vin se développe fondant, aérien sur un goût d’ananas, de gingembre et d’épices douces. Il fond encore en finale sur une bonne longueur avec une grande sapidité.

2009 19/20 ou 97/100              à boire entre 2010 et 2030
Couleur jaune-vert. Grand nez botrytisé, très frais, mûr, complexe, présentant des notes de fruits secs, de citron, de pain grillé. Entrée en bouche dense et profondément aérienne. Toucher scintillant de précision. Puis le vin prend un goût de poire, de pêche, d’ananas, de fleurs et s’accroche à la salive. Il faut forcer pour le cracher. Grande sapidité.
Très, très belle longueur. Du nectar pour les amoureux !

2008 16,75/20 ou 91/100     à boire entre 2012 et 2030
Couleur jaune-vert. Nez fin, fruité, frais, pur et complexe, sentant bon des notes de citron, de vanille, de crème d’amande et d’épices. Entrée en bouche à la fois présente et délicate, le vin caresse le palais, puis évolue en fondant, sapide et aérien. Une saveur citronnée circule tout le long de la dégustation, ce qui le rend très savoureux. Ce barsac s’achève sur une belle sève en finale. Très bien construit et incrachable. Encore une réussite !

2007 17/20 ou 92/100             à boire entre 2009 et 2025
Couleur jaune-vert. Nez frais, très fruité, fi n, mûr et même très frais. Bouche délicate et fondante où le vin se développe aromatique, structuré et aérien à la fois. Savoureux, riche, il s’achève caressant, long et complexe, plus rôti que le 2006 et le 2008. C’est un beau vin fin et sapide.

2006 17,5/20 ou 94/100 à boire entre 2009 et 2030
La merveilleuse fraîcheur du nez est toujours là ! Notes de citron, d’épices, de vanille. Superbe entrée en bouche où le vin se met à fondre, offrant des nuances tactiles sophistiquées, un goût de poire et de mangue. Surtout, après le milieu, il est l’un des rares à accentuer sa progression, s’achevant sur une finale confite et délicieuse que l’on palpe et suce longtemps. C’est du grand vin obtenu au prix de sacrifices importants.

2005 17,75/20 ou 95/100     à boire entre 2012 et 2035
Il fait partie des très rares sauternes de 2005 que je préfère au 2003. La couleur est jaune soutenu. Le nez intense, frais, pur et puissant se montre complexe. Il sent des notes d’épices et, surtout, de citron vert. Formidable entrée en bouche, ample, riche et pourtant fondante et aérienne. Le vin se développe complexe, noble, avec une présence incroyable. La richesse, la densité et l’aspect aérien se combinent à merveille. Ce vin ressemble à un élixir. Finale profonde, riche et fraîche. Caractère général hors norme.
La mise en bouteilles l’a un peu affecté, mais sa profondeur et son équilibre restent intacts. Vin majestueux.

2004 17/20 ou 92/100             à boire entre 2008 et 2025
Grand nez, frais, fruité, pur et complexe. Magie de l’entrée en bouche, magie du botrytis. Tout fond de façon remarquable. Milieu de bouche très présent, mais pas concentré façon sirop comme de trop nombreux autres. Grand équilibre avec de la vivacité. Très belle longueur. Encore une fois, c’est du grand vin !

Château Nairac was the revelation of Sauternes/ Barsac in the mid-1990s. Today, it is one of the greatest sweet wines of Bordeaux and of France. By producing on average seven hectolitres per hectare, the vintage is outside the standard of the appellation that authorises 25 of them. Yet, in Sauternes, quality is acquired in the grape harvest, and Yquem alone until now would allow this strictness in the selection of the most preserved grapes. Nicolas Heeter-Tari has obtained very regular and magnificent results since 1996. Assuming management of the property in the early 1990s, he is engaged in the production of natural sweet wines, discarding the use of the authorised chaptalisation and cryoextraction.

Nairac has botrytis or does not! Not everyone appreciated this very elitist approach at the limit of financial  failure. Arrows pointed from everywhere, but the taste of this wine was stronger!
All the years have a silky, luscious and ethereal texture in the mouth, which the great rot alone gives the wine. The wine ferments in barrels and the duration of the élevage is proportional to the intrinsic qualities of each year. It is no longer the standard application of eighteen months of élevage, but a more refined and noble work, of true hand stitching. Since 2005, the wine has been cultivated on lees and has more freshness. Each year offers a variety of complex tastes and aromas, which go from strawberry to ginger, nutmeg, coconut, pineapple, green apple, saffron, curry, to a texture of preserved lime very characteristic of the Barsac terroir. Seeing its exceptional density, I confronted Nairac at Yquem for the years 1994, 1995, 1996 and 1997.
Nairac won three times out of four, ceding only to the great Yquem 1995. After reading this comparison (which is too bold for some), readers helped me organise a broader blind and public tasting of ten years each. The result: half and half. Since 2004, Yquem has modified its way of doing things and regained the advantage, but Nairac maintains an exceptional quality/price ratio. This wine is enchanting due to the complexity of its aromas and sensuality of a soft body where the presence of the noble rot makes the sweetness so ethereal. It cannot be spat out and has an infinite length. I also recommend Esquisse de Nairac, every year of which is delicious and marked by this superb lusciousness.
2010  17,25/20 or 93/100     to drink between 2014 and 2035
Yellow-green colour. Pure nose with a scent of the oak moss typical of botrytis. Initially, it is crisp and refined in the mouth, and then the wine lusciously develops, and is ethereal with a taste of pineapple, ginger and sweet spices. It melts at the end over a good length with its great palatability.

2009 19/20 or 97/100   to drink between 2010 and 2030
Yellow-green colour. Great botrytis nose, which is very fresh, ripe and complex, presenting notes of dried fruit, lemon and toasted bread. It enters the mouth dense and deeply ethereal. A crisp scintillating touch. Then the wine takes on the taste of pear, peach, pineapple, flowers and clings to the saliva. You must force yourself to spit it out. Great palatability.

2008 16.75/20 or 91/100 to drink between 2012 and 2030
Yellow-green colour. Fine, fruity, fresh, pure and complex nose, with a nice scent of lemon, vanilla, almond cream and spice notes. Entering the mouth with a presence, and yet delicate, the wine caresses the mouth, and then becomes luscious, palatable and ethereal. A lemony flavour permeates throughout the tasting, making it very tasty. This Barsac finishes with good strength. Very well constructed and cannot be spat out. Another success!

2007 17/20 or 92/100 to drink between 2009 and 2025
Yellow-green colour. Fresh nose, very fruity, high-quality, ripe and even very fresh. Delicate and luscious in the mouth where the wine becomes aromatic, structured and ethereal at once. Tasty and rich, it finishes caressing, long and complex, more roasted than 2006 and 2008. It is a nice, top-quality and palatable wine.

2006 17.5/20 or 94/100 to drink between 2009 and 2030
The marvellous freshness of the nose is always there! Notes of lemon, spices, vanilla. Initially superb in the mouth where the wine starts to melt, offering sophisticated tactile nuances, a taste of pear and mango. Overall, after the middle, it is one of the rare ones to intensify its progression, finishing with a preserved and delicious finale felt and savoured for a long time. It is a great wine accessible at the price of major sacrifices.

2005 17.75/20 or 95/100 to drink between 2012 and 2035
It is the very rare 2005 Sauternes that I prefer to the 2003. The colour is intense yellow. The intense, fresh nose, which is pure and powerful, is complex. It has notes of spices, and especially, lime. Pleasant in the mouth initially, ample, rich and therefore luscious and ethereal. The wine develops to be complex and noble, with an incredible presence. The richness, density and ethereal appearance combine wonderfully. This wine resembles and elixir. A deep, rich and fresh finish. General character beyond the standards.

The bottling there was slightly affected, but its depth and balance remain intact. Impressive wine.

Great nose, fresh, fruity, pure and complex. Magic when initially in the mouth, magic of the botrytis. Remarkable at any rate. Middle of the mouth is very present, but not concentrated in a syrupy way like too many others. Great balance with vivacity. Very nice length. Once again, it is a great wine!
